Deep purple-black in color, the 2015 Cabernet Sauvignon springs from the glass with lifted crème de cassis, violets and chocolate box notes plus hints of lilacs, raspberry leaves, anise and cardamom. The perfumed black fruit preserves and chocolate-laced notes completely pack the full-bodied palate, with soft, velvety tannins and just enough freshness, finishing very long and very spicy. Definitely one for hedonists seeking immediate gratification.

Caymus Vineyards Napa Valley Cabernet Sauvignon has aromas and flavors which can only be achieved through “hang time” - a technique which chances the loss of crop if early winter sets in. Leaving the fruit to “hang” on the vine unusually long develops suppleness, increases color, and matures the tannins of the grapes. The wines are abundant in textural tannins yet soft as velvet.

Crop thinning, allowing measured sunlight to reach the vine’s fruit zone, and waiting for increased ripeness are all part of our viticultural practices. Caymus Cabernets offer a wide array of aromas and flavors including cocoa, cassis and vanilla. Wine maker notesWe created this wine to be low in tartness yet abundant in tannins, providing impressions of friendly chock richness. The palate enters rich with sweet, ripe tannins, expanding to a greater breadth of refined textures. The flavor profile includes dark chocolate, sweet tobacco, mocha, leather, brown spice, cedar, vanilla and sweet licorice.

The primary goodness of this wine is the presence of balance, with a supple texture, approachable grip and a fruit of the earth essence. For five generations, my family has lived and loved the Napa Valley. Our grandfather settled here in the 1800s and from that moment forward, we’ve grown to understand there is simply no substitute for an intimate knowledge of the land that only comes by ”living” in the vineyard.
